Delicious smoked chicken thighs.
Mix all rub ingredients in a bowl. Baste chicken thighs with olive oil and sprinkle a generous amount of the rub.
Preheat smoker to 250ºF and add wood chips. Place chicken thighs in the smoker and smoke for 2 hours or until internal temperature reaches 165ºF.

These look great. I’m curious after a couple of hours or when you come to temp, is your chicken skin crispy, fatty, or weird to chew through?
