		<description><![CDATA[Made this a while back, put them in a ziplock and froze them.  Got them out, thawed them and used them in my chicken quesidillas. Awesome!!!

After buying a 50lb bag of onions for making salsa and having some left, I&#039;m putting another batch of onions in the crock pot now.  This will be a much larger batch then last time. My house will smell fabulous today. :)

You might be able to pressure can them, however. I would think that freezing these would be the safest bet!

Any dish that would benefit from the sweet delicious concentrated flavor of onions can use the caramelized onions. The point is if you have them waiting for you, the sky is the limit.
It takes a couple of hours to caramelize oh lets say...3 lb of onions! it is a slow process otherwise you risk making the onions bitter so you see? that is this idea of using the crock pot is pure genious! WHY DIDN&#039;T I THINK OF THAT! :-0
