Loved the addition of the veggies…it really added to the overall tastiness of the dish. And the flavor is a wonderful blend of spices, not too hot, just right. I used Trader Joe’s fire roasted tomatoes with green chiles and that gave it a little extra special kick as well.

We will definitely put this one in our dinner rotation.
