These are lip smacking good!! I used "Red Enchilada Sauce" from PW site by Emily and mixed some in with the meat and poured the rest on top along with some extra grated cheese. I also covered mine in foil and used the oven instead of the microwave. They were even better the next day. Husband and son loved them!!

I make this at least twice a month and every time I make it my family licks their plates clean!!! I mix a small can of El Pato tomato sauce with a small can of hot enchilada sauce. I also use ground turkey instead of hamburger. If I have yellow rice on hand I will layer that in with it! This usually makes a dozen burritos which is perfect for us to be able to enjoy these two nights!!

My picky kid and my semi-picky husband both loved these. I loved that they were fairly simple and came together rather quickly.

Here's what I did (differently) to mine: I used a whole onion; 1 tsp. ground cumin; 1/2 tsp. oregano; 1/4 tsp. chili powder; 3/4 tsp. salt; 1 tsp. garlic powder; 1-28 oz. can El Pato tomato sauce (won't use it all); I put about half of the tomato sauce and all of the spices on the meat and simmered. Once I had the meat and beans prepared separately, I mixed them together to put on the tortillas. I filled the tortillas and placed them in a glass baking dish that had been sprayed with cooking spray. I then spooned 2-3 tbsp. of the tomato sauce over top of each burrito (just about enough to thinly cover). I then put cheese on top of the sauce. Put them in the oven at 350 for 5-10 min or until the cheese melts.

I will definitely be adding this to my "keepers!"

This is a great recipe when time is short and so is your patience and desire to cook. ;) I ended up using this recipe for my son's birthday party having a Birthday Burrito Bar Bash. ;) With LOTS of toppings and the option of flour tortillas or tortilla chips for those who wanted to make nachos with the meat and toppings instead of burritos. It was a HIT.

Made these last night! So quick and easy! My family loved them. The red sauce makes it....a little too spicy for my daughter (she wanted some ranch to go with hers). Thanks for this EASY, week-day friendly recipe! :)
