I crave these enchiladas and now I turn up my nose at shrimp enchiladas at Mexican restaurants because I know the ones I can make at home are better. Oh man, and now my mouth is watering.

I substituted fat-free half-and-half and fat-free greek yogurt for the heavy cream and sour cream. Also decreased the amount of butter. They were still awesome! My prep time was over 1 hour.
