		<description><![CDATA[While I can&#039;t attest to the &quot;Copeland&#039;s&quot; authenticity issue, I can say that this recipe was a success for a few reasons: 1) easy. 2) quick. 3) used up the pork tasso I had been given as a gift and had no idea what to do with.  I did end up making my own alfredo (with a TK recipe) and using about 1 T. olive oil to brown the tasso and shrimp.  With all the butter in the alfredo sauce, I couldn&#039;t justify any more!  I also threw in a bit of &quot;Slap Ya Mama&quot; cajun seasoning, which added a bit more kick.  Very tasty!  Thanks for a great recipe!]]></description>
