Description

We found this recipe and doctored it up to make it our own and better. We love it. It’s awesome as leftovers in a taco salad!

Ingredients

  • 1 package Frozen Corn, We Love Trader Joe's Fire Roasted Corn
  • 1 can Black Beans, Drained
  • 4 pieces Chicken Breasts; Frozen, Skinless, Boneless
  • 1 jar Salsa
  • 1 envelope Taco Seasoning, Penzy's Or Chi-Chi's

Preparation

Pour the bag of frozen corn in the bottom of the crock pot. Add the drained black beans. Place the frozen chicken breasts on top of the beans and sprinkle with the taco seasoning. Pour the jar of salsa over the top.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.

Remove the chicken, shred it, then add it back to the crock pot and toss with the corn and beans. Serve with all your normal taco fixings. It’s delish with cilantro-lime rice.

Oh my!!!! This is SO GOOD! We haven’t actually had dinner yet, but I have had a few sneak bites and MMmmmmm!

Now, I didn’t have any chicken breasts on hand, so I used 6 big chicken legs/thighs that I took the skin off of beforehand. About 3-4 hours into it, I took them out, removed the bones and shredded it, and put it back in. Because I wasn’t using boneless/skinless chicken breasts, I did have to skim fat off a few times, but that was no biggie.

Because of the amount of liquid this releases during cooking, with a bit of altering, this could also make an excellent tortilla soup! Add in a bit of chicken broth, some canned chilis…. Yum!

I just realized that I have made this like six times and never reviewed it! How rude! For something so very, very simple, this has really awesome taste. Actually, I’m a newlywed and this is the only recipe I have ever used my slow-cooker for. I always have these ingredients on hand, and it requires almost no thought in the morning. However, I never use a package of taco seasoning, it’s just never something I think to buy. Put I have had very good results by just adding some cumin, ancho chili powder, garlic powder, and paprika. (sometimes some turkish seasoning if I’m feeling crazy.) Mm. Now that I’m writing this, I think I will have to make it tonight. Thanks so much, Julip!

This is so perfect served in hard taco shells with a little bit of sour cream. We’ve made it twice now and I can’t wait to make it again!

These were really tasty. If you have a Trader Joes nearby, I heartily recommend getting the corn suggested. The whole family, even the preschoolers, at it up!

This was one of those recipes that sounds good. We made it and when it was done, I started to have doubts but we made our tacos and it was good. We will have it again but I think the idea of using it for nachos is good.

For me, finding this recipe was kind of like finding the Holy Grail. It is the easiest thing in the entire world, and the absolute most delicious dinner ever. My entire family love this – husband, four year old and 16 month old.

There is not much in this world better than watching your kids gobble up something that is good for them!

I’ve made it probably a half dozen times since first trying it.
