		<description><![CDATA[I love Pate Chinois!! And I happen to know the answer behind the translation! I live in Maine.  It is actually the French-Canadian name for China Pie. Not Chinese :)  Named after a small town here is Maine called China. It was a staple food for Canadian loggers living near China, Maine during the logging season.  It is filled with good starches and protien to keep them filled and logging all day.  The Maine version has creamed-corn in between the meat and potato layer. So good!
