I found the idea of drying out the thighs overnight to get a crispy skin interesting so I made this recipe tonight. I tried to rub the za'tar over the thighs but since they were dry, the seasoning didn't stick. I improvised by sprinkling some on once the thighs were on the baking sheet. I went to baste the thighs at the 20 minute mark and while brushing the juices on, the seasoning came off! So now I had one bare thigh. I brushed a bit of olive oil on it and sprinkled more za'tar on. Was the skin crispy? Yes, incredibly so. But the recipe doesn't work.
