Instead of peeling and chopping the squash, I just cut it in half, put it cut-side down, and roast it that way. Much faster!! I also use cream cheese instead of mascarpone to save money. Tastes great, and I can&#039;t imagine that the flavor difference is noticeable with everything else in there. We like it with a crunchy/crispy side dish for contrast since it&#039;s so creamy.]]></description>

Even my husband who could live without vegetables in his life remarked, &quot;this is really, really good!&quot;  I made it with regular pasta opposed to whole wheat and did add crumbled bacon on top.  Sweet, satisfying, creamy and delicious - this recipe is a keeper and so easy!  Next time I make it I will probably put the bacon and sage throughout the whole dish, rather than just on top.  Amazing!]]></description>
