I covered my pan with foil for the first 15 minutes of the potato cooking time, then removed it for another 15. Used halibut fillets and cooked for 10 minutes and added capers and dill to the lemon juice and zest mixture. Really simple and lovely – will definitely use this one pan recipe again and again!
