I had no clue about the cajun seasoned salt, but had Emeril's Essence on hand (which has salt in it), so I used it. We are cutting our sodium intake, so I also used a little garlic powder instead of the garlic salt. It was great! We ate it as a main course the first night and had leftovers, so we chopped it up and put it in salads on day 2. I've made it several times this same way, so it's in our monthly rotation.

Very good! Normally, my biggest problem with recipes for breaded chicken is getting the breading to stick. This breading held on great. The only changes I made were to omit the cheese (just forgot!) and to spritz lightly with a little non-stick spray. Will definitely make again.

This was fabulous!!! I only had to cook mine for about 22 minutes, and it was perfect. Use a meat thermometer to tell when chicken is done.
