You are right...this is delicious. I used heart healthy soup, low fat sour cream, and I baked the chicken instead of boiling it. It was easy and quick to prepare. Definitely will add it into my dinner rotation!

My family LOVES this simple recipe. I usually make it without the poppy seeds. We like it with yellow rice and green beans on the side. Yum!

This is also a favorite of my family. We normally just omit the poppy seeds, though. It is absolutely delicious served on top of rice.

Sorry for the addendum!
I made this once with a rotisserie chicken and while it was quicker, I was not as pleased with the outcome. I think it had to do with the dark meat (which I love, usually).
It wasn't bad, just better with all white meat.

I have to second this casserole! I wanted to post it as well.
This is my favorite casserole to take to families with brand new babies, or for funerals, etc.
The only differences in my version are: 1) add 1/4 C. chicken broth to soup/cream cheese mixture in saucepan and heat until cream cheese is mealted, then add chicken, 2) crush Ritz crackers in large baggie, add 2 T. poppy seeds and 2 t. black pepper, 3) just add pats of butter on top of crackers, if you don't want to melt it beforehand.
Thanks for posting this Beagle!! I hope others find it to be as easy and tasty as we do!
