I wasn't able to follow this recipe exactly because I couldn't find Knorr's Cream of Spinach soup mix at my grocery store. I used the vegetable soup mix instead, thinking it would be similar. (It wasn't). Next time, I would just leave it out; I don't think it added anything to the flavor. I also nearly doubled the amount of sauce and added an extra egg to the cheese mix (I used medium eggs). Made it in a 9 x 13 because I didn't have an 8 x 10. Overall, even with the change I made, it turned out well and was healthier than my usual meat sauce lasagna. Plus, the leftovers were great.

I added a cup of broth to the spinach and ricotta mix as it seemed dry. I'm glad that I did because with the no boil noodles it still turned out pretty dry. However, overall the flavors were good. Next time I plan to add more liquid and sauce.
