Delightfully easy to make and a big hit with the family. This will be fun to adapt for all kinds of meat and fish. Used honey mustard on cod and salmon. Used dijon on another piece of cod. Used panko breadcrumbs for all. Could use a little more salt, this time in the parsley mixture. Will definitely try sarcasticquilter's parmesan add, too -- could provide just the amount of saltiness I missed.

I just tried this but had to vary it a bit for what I had in the house.

I used honey dijon and spread a thin layer on both sides of the cod. It gave it quite a bite. The kids and hubs love that, me, I like it milder so will only do one side for me.

I also used extra crispy, original shake and bake since I was without bread crumbs.

I added about 1.5 tablespoons grated parmesan to the bread crumbs, garlic and parsley mix.

I coated both sides of the cod with the breadcrumb mixture.

All that said, we all enjoyed it and it's definately a keeper.
