		<description><![CDATA[This was the best oven fried chicken I&#039;ve ever had!  Next time I will probably try using a wire rack over the cookie sheet to keep the bottoms from getting soggy.  My chicken thighs cooked in 30-some minutes because they were small &quot;hormone free&quot; ones from the store--I used a meat thermometer to check the internal temp.  The weren&#039;t dry, but were scrumptious and juicy!  I used six small thighs and had just enough panko crumbs.  Also, if you use Tony Chachere&#039;s seasoning in the panko, you might want to cut down on the salt in the egg and flour.  Next time I&#039;d skip salt altogether since I&#039;ll be using Tony&#039;s again.]]></description>
