It was not only easy to prepare, but fantastic. Three of us ate the entire dish (along with rice and beans, so that’s saying something). I can also see how you could put this together the day before and pop it in the oven after work the next day. I wouldn’t change a single thing.

I added 1/2 teaspoon of cumin to the sauce, and let it boil down gently until it was reduced by 20-25%, to make it a little thicker.
