I used ground turkey in place of the beef and didn’t feel like whipping up some salsa so I just used the jar stuff. Using the ground turkey I had to increase the amount of cracker crumbs by ~1/3C. Also, I only used half the can of Rotel but I used the other half in my steamed rice. I can definitely say that this will be served in our house again! I love mini meatloaves since they cook so much faster. Thank you for such a great recipe!
