I doubled it and we still got thru the entire thing in one meal. I did add some spices to taste and cheese–and my hubby ate his in a rolled up tortilla, burrito style–and it’s not much to look at, but yay for another successful dish! Thanks for sharing.

I add 1 tsp. of garlic salt and 2 tsp. cumin to the seasonings.

My son loves this as he is allergic to egg and dairy. I make him a lot of rice dishes and this is one of his favorites. A very simple and tasty meal. We eat it with chips and cheese too.

As a working mom this recipe will be going in my regular rotation of easy weeknight meals. I did add some cumin and cayenne pepper, but that is because I love cumin and our family likes spicy food. Overall excellent dish!
