I have to admit I was skeptical but this turned out perfectly! I used an eye of round roast and I followed your instructions exactly for medium rare. Delicious! Flavorful, very tender – even the next day for sandwiches. Will do all my roasts like this now – thanks!!!!!

This roast turned out great and was pretty simple. No meat thermometer needed. I didn’t think the texture was much different than cooking it at 350 until it reaches about 115-120 degrees and then tenting for 10-15 min. It was nice to kind of forget about it and I had plenty of time to make au jus for french dips and sauteed onions and mushrooms. YUM!
