I had trouble with my meat thermometer because of the aluminum foil so I would recommend just checking the meat after a few hours to see if it has reached temperature. My meat cooked much faster than the recipe. The finished brisket had a rich flavor that reminded us of good sweet beef jerky. It was amazing. I can’t wait to make it again.
