Description

Savory one-pot wonder that’s delicious to the last bite!

Ingredients

  • 1 Tablespoon Safflower Oil
  • 2 cups Chopped Onions
  • 12 ounces, weight Frozen Baby Lima Beans
  • 10 ounces, weight Frozen Fordhook Lima Beans
  • 6 ounces, weight Frozen Butter Beans
  • 2 cups Cooked Ham, Chopped Or Cubed
  • 4 cups No Salt Added Chicken Broth
  • 1  Bay Leaf

Preparation

In a Dutch oven, heat safflower oil over medium heat until shimmering. Add chopped onion and sauté until onion is transparent.

Add baby lima beans, Fordhook lima beans, butter beans, ham, and chicken stock. Stir well.

Add bay leaf and bring to a boil. Reduce heat to low, cover, and simmer 1 hour, stirring occasionally.

Increase heat to medium low, crack lid, and simmer 15 minutes to reduce liquid by half.

Notes:
1. Recipe can be made with just a single bean type.
2. If you do not have onions on hand, you can substitute 1 1/2 teaspoons of onion powder for the chopped onions.
