Absolutely amazing! I made 9 servings of this (I was feeding my family of 7 where there are two teenage boys), and every bite got eaten! I will definitely be making this again!
I pan fried my chicken with a little salt, pepper, and adobo, and it complimented the dish perfectly.

What an amazing dish! If you count all the dicing, shredding, etc, it takes more than 5 minutes prep time, but overall, it doesn’t take too long to make. The flavor is very rich and creamy, and you wouldn’t know it’s made with milk. I used 2% because that’s all I had on hand, and I didn’t use spinach, as we didn’t have any fresh on hand. Otherwise, I followed the recipe, just tripled it to make 9 servings. My husband raved over it and it goes in the favorite list! Thanks for sharing!

Yum! So good and the fact that it doesn’t use heavy cream (but is just as creamy) is a plus! Even got my picky husband to eat the spinach out of it.

This recipe called to me the moment I saw it…lemon, chicken & pasta…yeah buddy! I didn’t have spinach, so I used asparagus from my produce coop and it was fabulous!! Great Weight Watchers friendly recipe that the entire family enjoyed tonight. Thanks so much!!!
