		<description><![CDATA[Made this for dinner last night -- I&#039;ve been wanting to roast a whole chicken for a while but it took me some time to work up the nerve.  (Don&#039;t ask me how I got it into my head that it was difficult in the first place.)

Anyway, I didn&#039;t have roasting bags so I just threw this into a dutch oven and put on the lid, and I added some potatoes to make it more of a full meal, but otherwise exactly followed the recipe.  It was very easy, super delicious and my husband raved about it and wants to put it into our regular meal rotation. 

 My only complaint is that I really don&#039;t think one small chicken needs that much butter.   When I made stock from the bones the amount of fat that rose to the top was kind of gross.   So next time I&#039;m going to just use a quarter of  the butter and see how it does.]]></description>
