Description

This is a recipe for a creamy baked chicken spaghetti. I enjoy this recipe because it doesn’t contain any “cream of” soups and it’s very simple to make. The creamy red sauce is just delicious.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 cup Onion, Chopped
  • 3 cloves Garlic, Chopped
  • 3 cups Cooked Chicken, Cubed
  • 2 cans (14 Oz. Size) Diced Tomatoes With Garlic, Basil, Oregano
  • 1 cup Heavy Cream
  • 1 package 3 Ounces Cream Cheese
  • 2 cups Shredded Mozzarella Cheese
  • 8 ounces, weight Angel Hair Pasta, Cooked According To Package Instructions, And Kept Warm

Preparation

Preheat oven to 350 degrees F; lightly spray a 9×13-inch baking dish with nonstick spray.

In large skillet, heat olive oil over medium-high heat. Add onion and garlic; cook 3 minutes, or until tender. Stir in chicken, tomatoes and cream. Bring to a boil over medium-high heat; reduce heat, and simmer 10 minutes, or until slightly thickened. Add cream cheese and 1 cup mozzarella cheese; cook, stirring constantly until cheeses are melted. Add the cooked pasta, tossing gently to coat. Spoon into prepared baking dish. Sprinkle evenly with remaining cheese. Bake 30 minutes.

This looked wonderful so we decided to make it last night since we had most of the ingredients. It was fabulous and will go in our recipe file. We made just a few adjustments based on what we had on hand. Thank you for such a great recipe!

Tried this recipe last night. It was very easy to make! I did need to add salt and a bit of crushed black pepper, as the spices in the canned tomatoes were not potent enough. I also used a mix of mini bowties, penne rigata, and elbow macaroni instead of angel hair pasta, and it came out wonderfully.

My two year old (who is all about eating bananas only right now) ate an entire bowl of it, so I am going to say that this one was a hit.

We made this last night and everyone loved it. I used pene pasta insted of angel hair for a bit more substance. I also added extra basil but that is because I am a basil freak. :) I will make again but I think I will try with sausage.

I’ve made this a couple of times and it is tasty! Easy to put together and it makes plenty for a second meal. I also like that it does not have any “cream of” soups in it. The only thing I added was 1/2 t. of italian seasoning.

This recipe is yummy and versatile! I altered it in that I used 1/2 tub of the Philadelphia Cooking Creme (Italian Herb blend) in lieu of the 3 oz. of cream cheese. I used my blender for the canned tomatoes since none of us like chunky cooked tomatoes. Try it!
