Beautifully simple and very tasty. I used thigh fillets to make smaller servings for the kids and they cooked perfectly under the grill. Will definitely be making this one again.

this was delicious! usually when i cook chicken, i can't stand to eat it because it is never cooked right. this was tender and juicy and pretty simple to make. the only problem i had was that i followed the instructions for carmelizing the onions, but they were burnt, even after stirring them every 15 minutes. they were in for about 45 minutes when i noticed they were toast. instead, i sauteed the onions in the cast iron skillet with a little bit of vegetable oil. other than that, it was very tasty and the whole family + a friend enjoyed it.

Thank heaven for low fat recipes...heehee j/k. This looks wonderful. I caramelize my onions in a fry pan with some EVOO and it only takes about 30 min. and I was imagining some mushrooms tossed in with them - yum - then this dish would be very close to that aussie chicken made at that aussie restaurant chain. Dip in some honey mustard dip - wow!! I will be making this for sure.
