Description

A perfect weeknight dinner, this Instant Pot Chicken and Rice recipe boasts flavor, veggies and rice all in one dish. Kids and adults love it! So delicious and easy, making dinner a breeze while also filling everyone at the table up.

Ingredients

  • 8 ounces, weight Sliced Mushrooms
  • 1 cup Sliced Celery
  • 1 cup Uncooked Long Grain And Wild Rice
  • 1 can (10 Oz. Size) Cream Of Chicken Soup
  • 3 whole Boneless Chicken Breasts
  • 2 cups Chicken Broth
  • 1 ounce, weight Dry Onion Soup Mix

Preparation

Spray the inside of Instant Pot with cooking spray. Layer as follows: mushrooms, celery, rice, chicken, broth and soup. Do not stir. Sprinkle soup mix over the top.

Place the cover on the pot and set timer to 10 minutes on high pressure (pressure cook setting). It will take around 20 minutes to build up pressure before cooking begins.

When cooking is done, let the pressure naturally release for 10 minutes then do a quick release.

Remove cover and carefully transfer the chicken to a work surface. Use two forks to shred and add the meat back to the pot.

Let sit for 5 minutes and serve!
