I thought these were very tasty. My husband said he didn't think he liked game hens until he tried these.

It's a fairly simple recipe and easy to make, which is nice since you don't have to prepare stuffing and cook down a glaze. You just prep the seasoning, chop some veggies and wash up your hens. It's a snap.

I didn't peel my carrots (lazy) and I used a turkey roasting pan since it's the only roaster I have. The hens still turned out just fine and the veggies were a wee bit crunchy but still tasty.

I'll be making these again!

Cornish hens were on sale last week, so I bought some not knowing what I was going to do with them. Tonight, my almost four-year-old requested "chicken". This is a child that's generally food-averse, so I was more than happy to comply with his request ... except the only thing that resembled poultry in the fridge/freezer was the cornish hens.
I didn't have celery or thyme, eyeballed the measurements, and substituted dried herbs for fresh, and they still turned out great. I was shocked that they cooked so quickly, and they met with approval from all.
I'd make this again, with either chicken pieces or cornish hens!
