I’ve made a recipe similar before but that one was too salty for my taste. I think this one wins because the salt of the ham seasons the potatoes and the evaporated milk keeps the consistency not too thick. Instead of adding the cheese and baking additionally, we just sprinkled the cheese on top of our servings on our plate. (Also, I didn’t add the can of mushrooms because my family would gag and fall off their chairs.)
I could see this recipe being a perfect busy night meal when your kid brings home extra two friends and you still have to rush out the door.
