I just made a shephard's pieish recipe using leftover ham. I used the traditional garlic mashed potatoes but used ham and sauted cabbage, onions and garlic. I alo used a layer of parm cheese with the filling. I topped the potatoes with greyere cheese and seasoned panko break crumbs. It was really good and simple.

Ham is wonderful, but it's not always easy to figure what to do with SO MUCH of it. Ham and bean soup is always good, as are ham sandwiches, but it's hard to think beyond that. Your casserole sounds really good, and it resembles the first suggestion that came to my mind, which is the hashbrown casserole with sour cream or cottage cheese, cream of mushroom soup and more cheese on top. Just add some small cubes of ham to it, -i'm sure there's a recipe for it somewhere on this site. Also, have you ever made a ham loaf or ham balls? They're both really good and use ground ham (i grind it in the food processor) and ground pork. These recipes usually come with a good sweet and sour type sauce. And as i mentioned before, I'm sure there are recipes for both of them somewhere on this site. Sorry i took up so much room on your comments, but I guess ham will do that to a person! : ) Thanks for the great recipe idea!
