It was very good, but I think if I make it again I’ll let the garlic cook a bit in a pan before adding it and relying on the warmth of the pot to soften it. I also don’t really enjoy the feta in the dish–I think I’d rather have an Italian hard cheese of some sort. Eatliverun, you’re still one of my favorite sources on this site. I used star pasta (because the store didn’t have alphabet letters), I’m not sure if that affected it or not, but I had to double the amount of tomatoes just to make sure there was some liquid to call it soup and cook the spinach. Otherwise it would have been a pasta dish. Where did I go wrong?
