The wonderful soft macaroni smothered in tomato and cheese along with the onion is pure comfort. Sometimes my grandmother would add a touch of chili powder (Mexene, the very best), to make it extra special. For variety, I have added shredded cheddar cheese in place of the Parmesan. This is a dish that kids absolutely love, and that I still consider one of my favorite meals from my childhood.
