This is the best way I've ever found to fix fresh corn. Tastes like my grandmother's fried corn that she used to fix in a skillet, but you don't have to worry about the corn getting "gummy". I've served fresh corn this way many times, and always get RAVE reviews. So simple but sooo delicious - particularly with organic corn straight from my garden!

I did 1.5 times (cause we had a *load* of corn). I used a light whipping cream, but not quite enough. So it wasn't soupy at all, which we liked. Don't skimp on the butter. Delish.

This was really, REALLY good! Getting the kernels off and the milk out of the cob ended up taking much longer than I'd anticipated. But, the end result is perfection! It's so good, I'm making it again this weekend but plan on having help with the preparations!

The taste was delicious, but I couldn't figure out if it was supposed to set up or something. Mine was just shy of runny and it baked for almost 50 minutes. Tips?

this stuff is CRAZY good. i actually didn't think milking the cob was all that difficult - i ended up pulling up on the cob (from the cutting board up toward my hand with the dull edge) and had much better luck than pushing down. my husband said that i have to make this for everyone we know as soon as possible - its THAT good it just has to be shared!

I LOVE this recipe and make it frequently. I hate cutting corn off the cob but I will never complain about doing it as long as this casserole will be the end product. I've had several requests for this recipe and will continue to make it year round!

This was a (rare) kitchen flop for me. I don't know if it was to blame on the fact that I halved the recipe or perhaps didn't milk the corn enough or skimped on the cream since I was guesstimating at a half recipe, but this did not turn out so well for me. To me, the corn casserole seemed too watery or not creamy enough, or maybe the casserole didn't meet some undefined expectation I had. The concept of this casserole still looks delicious to me, and perhaps I will try it again some other time.

I have a funny story to share: The next day, I decided to reheat the leftovers of the casserole in my oven so I wouldn't have to mess with my microwave. It seemed like the easiest option. I put the casserole in the oven, turned it on to 200 F, and began making the rest of my lunch. Four hours later, I finally noticed that my oven was still on. What was left of the casserole was brown and dried out and crispy, totally unfit for human consumption. I had a good giggle about my moment of kitchen ineptitude, put the corn into the garbage, and washed my dirty dishes, knowing that I'll have a chance to redeem myself (and my flop with this particular recipe) the next time around. :)
