Used a brown/wild rice blend and it was good, but the rice was really soupy. Next time I would double the amount of rice and use boneless, skinless chicken breasts.

If you like Mexican food, you’ll love this. It’s not too spicy, so it’s good for pickier eaters, and all the fresh ingredients and their flavors mix very well. It’s one of the best chicken dishes I’ve made, and I’ve made a ton. I will be putting this on my favorites list and making it again and again!
