Next time I will leave lid on for part of the oven time- we all would have liked a bit more sauce.  Good advice on getting a good &quot;brown&quot; on the pork before the long oven braise.

		<description><![CDATA[These were delicious. Added canned chipotle peppers in adobo sauce (about 2-3 chopped plus some of the sauce)--gave a nice heat with good smoky depth. I also used a different ale as I had no access to the Fat Tire. Substituted a  pork loin; cut into chunks, and left the lid on part of the oven cooking time time so the loin wouldn&#039;t dry out.  After I shredded and put back in the oven, what was left of the liquid evaporated quickly, leaving me with moist, flavorful meat. This served a crowd, and I have leftovers. Served with soft corn tortillas, a squeeze of lime, cotijo cheese, and diced avocado.  Cilantro would have been nice if I had it.
