I added shrimp to this recipe and it was a very nice addition- I just added the raw shrimp to the veggies towards the end of their cooking time.

I may try making this with half and half next time instead of heavy cream to see if I can cut a little bit of the fat.

It is so easy and quick and I usually have the ingredients around. I usually add some extra lemon zest and cheese because the flavor can be a little too subtle for me otherwise. The last time I made this I did a quick roux before adding the cream and was happy with the thicker sauce. In any case, it is an awesome recipe that is becoming a staple go to meal.

I had two people over for dinner and it received rave reviews from all 3 of us. I don’t have a zester so used fresh lemon juice. I’ll make it again when I get a zester as I’m curious as to the difference as I think the lemon zest would provide far more flavor.

Was such a great and easy dish for a warm summer night.
