		<description><![CDATA[I thought this recipe was ok. It was a bit mushy and not the prettiest looking dish, so a crunched a few more chips on top and diced some tomato for color. A side salad would be nice, or even some chopped lettuce on top if you have it. My boyfriend liked the dish more than I, but overall it was solid, just seemed like a lot of work for the end result. I appreciate you submitting the recipe, perhaps I will try it again and make a few tweaks here and there.]]></description>

		<description><![CDATA[Made this for dinner tonight.  It was SO good! My family just loved it. Even my 4 year old daughter who tends to be picky and never asks for seconds....ASKED FOR SECONDS! I&#039;d call that success!
I did make just a few minor adjustments. To lighten it up a tad, I used reduced fat cheese, light sour cream and Tostitos Baked! tortilla chips. I&#039;m sure you could not tell a difference between a lighter version and the full fat stuff. :) I also omitted the beans from the casserole only because my family is weird and prefers sweet baked beans instead of regular beans and I thought baked beans would taste funny in a mexican type casserole! Anyway, it was great and we&#039;ll definitely make it again!]]></description>
