		<description><![CDATA[Just made this for dinner tonight and it was delicious!  My very picky family loved it.

A few things:
1.  This does not make enough for a 9x13 pan or 3 layers.   I ended up using a 2.5 quart casserole dish and got 2 nice layers 

2.  It makes 8 small portions or 6 big portions.

3.  I used reduced sodium taco seasoning and am glad I did!  Between that, the enchilada sauce and the tortilla chips, this dish is quite salty.

4.  I used a can of pinto beans and rinsed them before I added them to meat.  I think Black Beans would be great but not everyone in my family likes them. 

This recipe is a keeper!]]></description>
