The salsa I had was spicy but other than that, boring. The ingredient amounts are a little vague. 1 jar of salsa or green sauce- 8 oz? 12 oz? 20 oz?, what size tortillas and how many in a package? 1 can black olives – how big a can?
I didn’t use a whole chicken and it made 9 enchiladas and I had to use an additional 9×9″ pan.

It will definitely be part of my dinner rotation. It was easy and tasty! My SO really enjoyed it and doesn’t usually like enchiladas. I made a smaller portion of this and it was still a lot of food. I also added some shredded zucchini to the filling and will likely add more veggies the next time I make this.
