this was really good. i halved the recipe and added a chopped bell pepper and a couple tbsp tomato paste to thicken the sauce. i seasoned my rice with chili powder. i wanted it to be a bit spicier so i also added several shakes of tobasco sauce. i loved that it was so easy. the chicken was really tender. i will definitely make this again and play around with the spices.

This is a great "set it and forget it" recipe. I start this in the morning before I go to work and when I get home, dinner is ready to serve. It's a bit on the spicy side. If you don't like that, you can cut the spices down. The chicken is extremely tender. I used a very light beer to start with and didn't notice a strong flavor of beer in the chicken. I am looking forward to experimenting with stronger flavors of beer to see what happens.

This was such an easy recipe. I was able to throw everything in the slow cooker before I went to work and had a delicious (and very spicy) meal when we got home at the end of the day. I will definitely make this again soon. It will be fun to experiment with different flavors of beer.

Flavorful recipe. Make sure you choose a beer you really like, since the flavor comes through pretty strongly. I used chicken breasts and they got a little too dry, but I chalk that up to my first time using my new crock pot. Next time I'll try just cooking it on low for 4.5 hours rather than 6. It is spicy--so tone down the spices if you're not up for it!
