It was interesting to combine Mexican flavors with pasta – a Mexican mac ‘n cheese, if you will. I added some pre-cooked, diced chicken to make it more of a one-dish meal. Definitely heed the author’s advice and let the pasta and sauce sit for 5 minutes after combining – the consistency thickens up perfectly.

I’m rating this 4 mitts because I asked my significant other how he liked the dish, and he replied, “It’s good.” A 5 mitt response is more like, “Mmmmm. So good…. You have to make this again.” And I just didn’t get that reaction. Still a tasty meal, and I can imagine many others rating this 5 mitts, given individual tastes! Thanks for sharing!
