		<description><![CDATA[This was so yummy. I&#039;ve made a few barbacoa recipes and this was the easiest and most tasty. I was pressed for time and cooked it on high for 4 hours instead of low for 8. It still came out good but I would not recommend it. My mistake. The meat comes out much better slow cooked on low. Great as leftovers, too!]]></description>

I make several batches of the sauce/marinade at a time and freeze it with or without the beef added, so it&#039;s crazy easy to pull out and toss in the crockpot on busy days.  Our favorite use for leftovers is to spread the rice on tortilla chips, top with the beef (drained a bit) and some cheese, then popped in the oven long enough to make it nice and bubbly....YUMM!]]></description>
