Doubled the recipe to have plenty of leftovers for lunch tomorrow. Used homemade taco seasoning, and on top of the 2 cans of Ro-Tel (1 original and 1 mild) I added a spoonful of homemade salsa courtesy of my sister (Ree’s restaurant style salsa). Best Cinco ever!
