My tortillas weren’t large enough to fold into chimichanga shape, so I rolled them like enchiladas and set them seam-down on the baking sheet and covered them with shredded cheese before I baked them. The flavor of the steak wasn’t perfect, so next time I may try a different kind of rotel or add some seasoning, but overall these were great and my family loved them.
