I didn’t have a shallot, so I substituted a white onion. I only cooked my chicken for 10 minutes in the oven; if I had cooked it for 15-20 minutes it definitely would have been overcooked. My husband loved this recipe. It’s a keeper!

I used boneless, skinless chicken breasts as that’s what I had on hand. Next time, I will reduce the baking time but, honestly, the flavor is delicious. The herbs gave a subtle, delicious flavor. I think this would also be delicious with chicken thighs.
