		<description><![CDATA[These were amazing.  Fresh and flavorful. Spicy, but not overpowering.  Pretty easy to make, and we found that one enchilada was plenty for one person.  I doubled the recipe, and it didn&#039;t quite double the number of enchiladas, but there were plenty to go around, and they froze and reheated well.  I will definitely be making these again.  Thanks for sharing!]]></description>
