Delish! I subbed in black pepper covered goat cheese for the cream cheese to give it a little extra kick, and brushed the chicken breasts with a little paprika/liquid baconfat mixture before sliding them into the oven.

They turned out great and it was SO simple.

I made gravy with the chicken juices at the bottom of the pan (I used a pyrex pie plate.) You can never have too much gravy, right?

Yummy! I flattened and rolled the chicken for this. I added about 1/2 cup of shredded cheddar cheese to the filling and this was soooo good. I only made 3 chicken breasts, but stuffed them extra full. I will definitely make this again and again. Thanks.

I tried this tonight doing it the flattened way instead of the pocket way and really liked it. I think next time I'll cut the amount of cream cheese and add in more stuff to compliment the bacon and maybe up the oven temp a bit to get a better brown on the chicken. But overall, very tasty!
