I&#039;ve been married to a Cajun guy for 20years now and 
I&#039;ve cooked many a Cajun dish ... but I&#039;ve NEVER seen  Etouffe with Chili - or Cheese ??????

I don&#039;t think Cajuns even know what Cheese is ... and they sure don&#039;t use coriander, cloves, cumin or cream in etouffe  :-)

That said, I&#039;ll give it a try ... it looks pretty good !]]></description>

		<description><![CDATA[When I saw this I had to check to see if this was inspired by Yat&#039;s, now called Dat&#039;s in Bloomington, IN.  Checked out the blog and surely enough it was.  I will have to try it and see how it compares to the tasty overly rich chili-cheese etouffe I have had many times (mostly stolen from my husbands double portion).  Looks to me like this might be a tad healthier version, which is a nice surprise.

I think I will do it with crawfish or shrimp though like the etouffe at Dat&#039;s.  Thanks for giving us something to try now that we&#039;ve moved away from Bloomington.]]></description>
