I made it for dinner with my brother one night.. he went crazy over it. I thought it was really good, I just didn’t care for how corn-y it tasted.. maybe it was the creamed corn? I’m not sure..

This was delish! My husband, young kids and I loved it! I started off by using the crockpot chicken taco recipe someone else suggested. It was the perfect mix of spicy and sweet!

This was soooo good, even my picky hubby loved it. I used leftover turkey (I think any leftover meat would work well.) & a 16 oz. jar of enchilada sauce. It will definitely be making a repeat appearance on our table.

This is delicious! Very simple and tasty. I’ve always wanted to love “mexican casseroles” but most of them either don’t live up to my expectations or don’t taste good enough to make them worth the work. This wasn’t a lot of work, and was yummy! Thanks for sharing!

This has got to be the best thing I’ve ever made so quickly. Very easy to make and it is absolutely delicious. I think I ate the whole thing – not in one sitting but almost. I will make this at least once a week. You can control the heat of the chilis depending on how hot or mild you like it. The red chili just gives it that great kick. I also added a few chopped onions on top of it during the last 15 mins of baking just because I love onions on everything. Wonderful recipe.

LOVED this recipe! I used left over Thanksgiving turkey in place of chicken. It turned out great, and not too spicy, great served with salsa!

Waaaaay good! We really enjoyed it. Great flavors. I boiled plain chicken breasts then seasoned it with some cumin, pepper, garlic and an all purpose mexican style seasoning. It was awesome!
