		<description><![CDATA[These are delicious and even my kids love them! And they&#039;re filling. I can only eat two. I use homemade tortillas instead of corn tortillas. It&#039;s a lot more work that way but they taste so much better! I also find the cheese sauce makes the tortillas a bit mushy, so next time we&#039;re going to try baking them without the sauce and pouring it on after. It&#039;s definitely a keeper though!]]></description>

Like adding in zucchini or swiss chard instead of the spinach, or trading the cheddar for montery jack cheese.   Or even making them spicier with added hot chile&#039;s or canned chipotle&#039;s.
